How to cook ball tip/beef rump with sous vide!

Lär er laga mat med tillagningsmetoden sous vide!
Det är jättelätt och jätteroligt!
Recept:
1 Rostbiff.
Rub:
1 msk spiskummin.
1 msk torkad oregano.
1 msk finmalen muskotnöt.
1 msk kanel.
1 msk paprika.
1 msk salt.
1 msk svartpeppar.
Tillsammans med köttet i påsen:
1 knippe färsk timjan.
1 skvätt Liquid Smoke.
2 msk klarifierat smör.
Till stekning i slu*tet:
1 rejäl klick klarifierat smör.
2 vitlöksklyftor.
Köksattiraljer:
1 Cirkulator.
1 Vakuumförpackare.
1 plastkantin eller stor gryta/bunke.
1 sous vide påse.
Blanda alla kryddorna så att du får en härlig rub.
Massera in köttet med din egengjorda rub.
Lägg ner köttet i sous vide påsen tillsammans med färsk timjan, smör och liquid smoke.
Försegla påsen genom att skapa vaccum i den med hjälp utav vaccumförpackaren.
Ställ in önskad temperatur på cirkulatorn, jag har denna gång valt 60 grader celsius.
När önskad temperatur är uppnådd, stoppa ned din påse fylld med alla härligheter och låt den ligga där och gosa till sig i 24 timmar.
Plocka upp påsen.
Värm upp en stekpanna på högsta värme, släng i en rejäl klick klarifierat smör och några vitlöksklyftor.
Skär upp påsen, plocka ur köttet och släng ner i stekpannan.
Stek på alla sidor.
Ställ in i kylskåp för att svalna.
Plocka ut och skär upp i tunna skivor.

It’s really easy and fun!
Recipe:
1 Roast beef.
Rub:
1 tablespoon cumin.
1 tablespoon dried oregano.
1 tablespoon finely grounded nutmeg.
1 tablespoon cinnamon.
1 tablespoon paprika.
1 tablespoon salt.
1 tablespoon black pepper.
Along with the meat in the bag:
1 bunch of fresh thyme.
1 dash of Liquid Smoke.
2 tablespoons of clarified butter.
For frying the end:
1 big dash of clarified butter.
2 cloves of garlic.
Kitchen items:
1 Circulator.
1 Vacuum sealer.
1 plastic canteen or large pan / bowl.
1 sous vide bag.
Mix all the spices so you get a great rub.
Rub the meat with your self-made rub.
Put the meat in the sous vide bag with fresh thyme, butter and liquid smoke.
Seal the bag by creating vaccum with help by the vacuum sealer.
Set the desired temperature on the circulator, I have chosen 60 degrees Celsius this time.
When the desired temperature is reached, slip in your bag filled with all the goodies and let it lie there and cuddle up for 24 hours.
Pick up the bag.
Heat a skillet over high heat, throw in a hearty dash of clarified butter and a few cloves of garlic.
Cut open the bag, take out the meat and throw it in to the pan.
Fry on all sides.
Put in the refrigerator to cool down.
Take out and cut into thin slices.
ENJOY!

Once oven is heated, place Ball Tip fat side up on cooking sheet. Place in oven. Do not flip.

Pour marinade over steaks, cover and let sit 2 hours. Preheat stovetop to medium-high. Remove steaks from marinade; pat dry with paper towels.
Transfer steaks to skillet or grill pan. Cook for 4-6 minutes per side, or until desired doneness is reached.Preheat oven to 450°F. In a small mixing bowl, combine salt, peppers and onion powder. Rub mixture evenly on ball tip roast and place in a roasting pan fitted with a rack.
